So I apparently recieved my first shout out in the blogging world. Thank you Debbie at The Life of Ryleigh. Seriously, she has turned me into the biggest blog stalker I know…other than her that is! She finds all of the greatest blogs with DIY projects, great deals, etc. Let’s see, how did she put it – I believe she called me her Crafty Cohort at work. 😉 Right back at ya girlie!
Tonight I made one of my all time favorites – Goolash. Now I know everyone has their own version of this but my Momo’s recipe takes the cake! Simple to make and oh so good!
1 package of hamburger, browned
1/2 box macaroni noodles, cooked and drained
1 can tomato sauce
1 can corn
Once you have cooked your noodles and browned your hamburger, combine all ingredients into a bowl and mix well. I add alot of chili powder, sometimes where my goolash has bite! Once it is all mixed well, dump into a 9×13 pan and bake at 350 for about 20-25 minutes. I like to sprinkle a little extra chili powder on top before baking.

Once again, a FABULOUS recipe from Jamie! 🙂 I made this for dinner for myself and my mom tonight (Yes my mom came for a short visit). This is soooo good! And what a great time of year to start whipping out the hot soup recipes!!! Makes me anxious for winter!
1.5 BIG Potatoes (peeled, cubed)
1 bag frozen corn
1 cup (maybe a little more) frozen sliced carrots
3 beef bouilion cubes
3 cups water
1 package of hamburger, browned (a little over 1 lb)
8 oz. Velveeta cheese
Shredded casserole cheese
Some 😉 celery seed
Some 😉 crushed red pepper
Some 😉 garlic salt
Brown your hamburger, adding the red pepper and garlic salt. In a pot, combine all other ingredients, except the Velveeta cheese. Cook until the potatoes are done. Just prior to serving, add in the Velveeta. Cook until melted. Serve hot and sprinkle shredded cheese on to taste. SUPER good left over! 🙂

So tonight I made one of my favs…mostly because it is a casserole…and then there is the cheese…and its really easy…and the fact that I don’t have to cook on Tuesday because it is REALLY good left over. Okay, you get the point. 😉 So Jamie gave this recipe to me and I do not recall where it is she got it but awesome pass-on! So here it is:
1 package of ground beef, browned (approx 1.5 pounds)
1 can black beans
2 cups salsa (get HOT for a little kick)
2 tbsp taco seasoning
1.5 cups sour cream (approx)
LOTS of cheese (I think I used 5 cups – SHHH)
Brown your hamburger. Add beans, salsa and taco seasoning. Cover the bottom of a 9 x 13 pan with the tortillas. I tear mine so they do not overlap. Add half of the meat/bean mixture for the first layer. Second layer is half the sour cream. Then a layer of cheese. Repeat. I also make sure I save a good bit of cheese for the top! Then bake at 350 until the cheese is melted, or a little longer so it is brown (the way I like it).
So the night AFTER we have tacos…I use the left over seasoned meat for my version of 7 layer dip. My dip just doesn’t have seven layers. 😉 Anyway, by using the left over meat, I can convince Tyson that left overs are OK! 😉 Here is what I do.
7 layers+ dip
16 ounces sour cream
16 ounces guacamole
4 cups of cheese (maybe more? 🙂 )
1 can refried beans
1 jar salsa
1 can olives
1 bag of chips
I guess you could use a 9 x13 pan but I like to use my largest corning wear dish. First layer is beans. Second, guac. Third, sour cream. Forth, meat. Fifth, cheese, Sixth, olives. Once we scoop it on to our plates, we top with, yes, more cheese and some salsa, if we want.
